### Introduction
The first time I tasted these scrambled eggs, I was sitting at a seaside taverna on the island of Sifnos and after one bite I was hooked. The creamy, tangy feta melting into the rich tomato base, the soft scramble of eggs absorbing every bit of flavour. Simplicity done at its best.
This dish, known as **Strapatsada** "Στραπατσάδα", is a staple of Greek summer kitchens. With the fresh ripe tomatoes, virgin olive oil and feta, it is comforting, effortlessly delicious, and best enjoyed with crusty bread to scoop up every last bite. This is a staple in our weekend breakfasts!
### Ingredients
- Extra-virgin olive oil
- Fresh Cherry Tomatoes (250 grams)
- Eggs (2 to 3 eggs per person)
- Feta Cheese (100 grams/ 1 block per 2 person; increase if cooking for more people)

>Use any fresh herb such as parsely, dill or selery that you have to finish off this dish and give it that extra boost of fresh Greek flavour!
### Instructions
1. Finely dice the tomatoes to a pulp and add to the frying pan with a bit of virgin olive oil. Cook of on medium heat, all the water of the tomatoes, to the point it starts becoming like a paste.

2. Crumble the 1/2 to 3/4 of the feta into the cooked tomato paste and cook off the water as well.

3. Add the eggs to the feta-tomato mixture and continuously scramble the eggs on low heat.
4. Crumble the last of the feta on the scrambled eggs and the finely chopped herbs to the pan before serving.
