When you’re feeling adventurous or aiming to impress without spending hours in the kitchen, this recipe is your go-to. With minimal ingredients and simple staples you likely already have at home, it’s both effortless and delicious. Also with the clever use of the avocado skins—what I like to call “Avocado boats”—as charming little bowls it adds versatility to this dish. Since it makes the dish perfect for finger food at a casual standing party. Your guests can easily hold these adorable avocado boats, making mingling and snacking a breeze. My supermarket always carries cooked cray fish, so I choose this but really this recipe transfers great if you want to use shrimp or lobster. Just make sure that whatever crustacean you choose is bitesize or be sure to cut them up to bitesize bits. Let's start! ### Ingredients (for 2 - 4 people) * 2 avocados * Cray fish (150 grams) * Mayonaise or yoganaise (1 tablespoon) * Zest of 1 lemon * Juice 1/2 half a lemon * Salt & pepper to taste ### Instructions 1. Thaw the crayfish if necessary in boiling hot water; the crayfish needs to be fully cooked and pink-red. Due note this is not a necessary step if you bought the cooked cray fish. 2. Wash the avocados and cut it in half lengthwise. Be sure to keep the skin intact if you are using the skins for the serving later. 3. Depit the avocado and remove the flesh of the avocado and add them to a mixing bowl 4. Cut the flesh of the avocado. You can mash them more finely but personally I like having bitesize slightly big avocado squares for the look, feel and taste of dish. 5. Depending on the size of the chosen crustacean you may need to cut them up into bite-sizes and and them to the bowl with the avocado 6. Zest the lemon in this bowl and mix 7. Squeeze a bit of the lemon for a bit of freshness 8. Add the tablespoons of mayonaise or yoganaise and mix. I prefer to go for the yogonaise which is less fatty but both are delicious. 9. Add salt & pepper to taste 10. Fill the shrimp/avocado salad in the avocado boats and serve! ![[IMG_9421.jpg |300]] Simply Dushi!
