### Introduction
Dive into the vibrant world of ceviche with my version of this recipe featuring _leche de tigre_, the zesty and flavourful marinade that brings the dish to life. Perfect for seafood lovers, this recipe combines fresh fish with citrus juices, ginger, chili pepper, and aromatic herbs to create a marinade that “cooks” the fish to perfection. Garnished with crisp radishes, red onion, and cilantro, this dish is as beautiful as it is delicious. Whether you’re serving it as a light appetizer or a main course, this ceviche is sure to impress with its bold flavours and refreshing taste.
### Ingredients for 2-3 people
* 250g fresh fish or seafood (e.g., any type of white fish such as snapper, sea bass, shrimp or scallops), cut into small cubes.
* 2 cloves of garlic
* 3 cm of fresh ginger
* 2 limes (juiced)
* 2 lemons (juiced)
* 1 orange (juiced)
* 1 small red onion thinly sliced
* 1 small chili pepper(e.g., jalapeño or red chili), finely chopped
* 50 grams of cilantro
* 1 small avocado (diced) (optional)
### Instructions preparation Fish
1. Cut the fresh fish or seafood into bite-sized cubes and place them in a glass or ceramic bowl. (Avoid metal bowls as the acid can react with the metal and alter the flavour.)
2. Save some pieces of the fish to be used in the next step for the " leche de tigre " the marinate
### Instruction Preparation Leche de Tigre & Marinating the fish
1. Remove the skin of the ginger
2. In a blender use the leftover pieces of fish and blend them with 2 cloves of garlic, 30 grams of cilantro, 1/2 small chilli pepper, the ginger and the juice of the orange, lemons and lime
3. Add a pinch of salt
4. Scour the pulp and transfer only the liquid to the bowl with the cut fish. The fish needs to be covered in the liquid.
5. Cover the bowl with plastic wrap and refrigerate for 45-60 minutes, or until the seafood turns opaque and is “cooked” by the citrus juice. How long it takes to become opaque depends on the size of the pieces, the type of fish and the acidity of the citrus. Keep this in mind!
### Instruction Preparation of the Vegetables and Plating the dish
1. While the fish is marinating slice the radishes, the rest of the chilli pepper and the red onion thinly
2. Chop the rest of the cilantro
3. Dice the avocado (optional)
4. Transfer the opaque fish pieces to a serving bowl
5. Add a bit of the marinate liquid to the serving bowl
6. Add a bit of the red onion, the radishes, the cilantro, the chilli and the avocado (optional) per serving bowl
