### Introduction
This is the recipe that passed down to me from one of my aunts from Aruba. Cooking and eating this dish simply brings me back to simpler times when I still used to live closer to family (and in warmer geographical regions).
This slow braising style of preparing of the chicken allows the chicken to soak up all the deep, umami flavours, making every bite a delicious experience transporting you to the Antilles. Whether served as a family dinner or prepared for a gathering, this dish carries the warmth and heart of home.
### Ingredients
* 500 grams of chicken filets
* 250 grams of ham (cubed)
* Tomato paste (2 teaspoons)
* 1 red paprika
* 1 yellow onion (diced)
* 3 cloves of garlic
* 1,5 cups of rice
* Carrot & peas can (200 grams)
* Soy sauce (50 ml)
* Ketjap manis (sweet) (50 ml)

> Make this flavourful dish even more delicious by adding: few slices of avocado, fried plaintain, fried egg or a hot sauce. The hot sauce of choice, for a lot of people back home, is "pika di siboyo" which you can make yourself by following this easy recipe [[Caribbean Hot Sauce Pika di siboyo]].
### Instructions
1. Cook the rice according to the instructions
2. In a separate pan brown the chicken filets on medium heat.
3. Slice the paprika in big pieces. It will be added to the stew, so no need to slice them in very small pieces.
4. Once the chicken filets are browned, add the soy sauce, the ketjap manis, cloves of garlic, tomato paste and the paprika. Make sure the chicken filets are bare covered with all the liquids. If not add a bit of water and start stewing on medium heat for 30-45 minutes with the lid off.
5. The chicken is done when its fully cooked and the sauce has thickened up. Let the chicken cool off, so that you can shred it in big pieces. Save the sauce!
6. Dice the onion and add it to the pan with the sauce and start cooking the onions.
7. Add the cubed hams to this pan and continue cooking them till they are slightly browned.
8. Add now the shredded chicken, the cooked rice and the canned carrot & peas and mix well.
