**“Homemade Caesar Salad with Creamy Dressing, Crispy Bacon & Chicken – Perfect as a Side or a Main Course”**

### Introduction
Classic, creamy, and packed with umami – this is my version of the classic Caesar salad recipe. Whether you’re preparing it as a refreshing side dish or loading it up with chicken, crispy bacon, and jammy eggs for a satisfying main course, this version hits all the right notes. The homemade dressing is rich and flavorful, thanks to egg yolks, anchovies, parmesan, and a touch of garlic, while the fresh romaine and juicy cherry tomatoes add crunch and brightness. It’s a versatile dish that’s easy to assemble and always a crowd-pleaser. Yum! Let's get started!
### Ingredients for 3-4 people
##### Caesar salad dressing
* Mustard (1 teaspoon)
* 2 egg yolks
* 4 anchovies
* Parmesan (50 grams)
* Virgin olive oil (20 ml)
* 1-2 garlic clove(s)
#### Salad
* Romaine lettuce (2 medium ones, cut)
* Capers (2 teaspoons)
* Cherry tomatoes (200 grams, cuartered)

### Instructions for the Caesar salad dressing
1. Separate the egg yolks and add in a blender. To this blender add the mustard, anchovies, parmesan, the garlic cloves and the half of the olive oil and blend for 4 minutes till one smooth consistency.
2. Add the rest of the olive oil till you receive the desired thickness that you want for the salad dressing.
### Instructions for the assembling of the salad
3. Start making the salad by cutting the romaine lettuce, wash it thoroughly and add to a bowl. Set it apart for later. Slice the cherry tomatoes in quarters and add to the bowl together with the capers.
4. Add half of the salad dressing to the salad bowl and mix well. This is a great side dish for so many dishes!
5. If you are choosing to go for the full salad as a main course start frying up the chicken in olive oil with just salt and pepper and cut them up in bite size pieces
6. Fry up the bacon till crispy so that you can break it in bacon bits
7. Boil the eggs for 5 -6 minutes. Once boiled, cut the eggs in quarters.
8. Now to make the salad an even more delicious main dish by adding the chicken pieces, the bacon bits to individual bowls per person.
9. Grate some parmesan on the bowls, drizzle the caesar dressing on the salad and serve!
