### Introduction
I absolutely love this Amarena Cherry Semifreddo—it’s one of my all-time favourite desserts. This no-bake Italian treat is incredibly easy to make yet stunning enough to impress your guests. With layers of silky whipped cream, tangy lemon zest, and rich Amarena cherries, every bite is a refreshing burst of flavor. Optional crunchy almonds add a delightful texture, while the freezing process creates a beautifully chilled dessert. It’s one of those recipes that’s worth adding to your arsenal for any festivities or potlucks—you’ll be asked to make it again and again!
### Ingredients
* Heavy whipping cream (cold, 500 ml)
* Vanilla extract (3 teaspoons)
* 5 Eggs
* 2 Lemons
* Sliced almonds (4 teaspoons) (optional)
* Amarena cherries (1 pot, 250 gr)
* Granulated sugar (4 teaspoons)
* Jelly sugar (1 teaspoon)
### Instructions Preparations & cherry syrup
1. Line a metal loaf pan *9 x 5 x 3 inches* with plastic wrap and add your decorations such as the sliced almonds in it.
2. In a little pan on medium heat add the amarena cherries to the pan and sprinkle 1 teaspoon of jelly sugar
3. Zest half a lemon and add to this mixture and squeeze half a lemon into the cherries.
4. Cook for 10 minutes while stirring
5. Take of heat and let it cool off
### Instructions whipped cream
6. Pour the chilled heavy cream and the teaspoons of vanilla extract and whip it at high speed until soft peaks form (4-5 minutes)
7. Zest 1 lemon and add to the mixture
8. Store the mixture in the fridge
### Instructions sugar-egg mixture
9. Separate the egg yolks and add to a large mixing bowl
10. add the 4 teaspoons of granulated sugar to it.
11. Put the mixing bowl on top of a heat resistant pan with simmering water and beat the egg-sugar mixture till doubled in size and light brown-caramel colour.
### Instructions building the semifreddo
12. Fold the cold whipped cream gently into the egg-sugar mixture. This is your base of your semifreddo
13. Pour half of the cherries with syrup into the cool metal loaf pan with the plastic wrap
14. Add 3/4 of the base of your semifreddo to the metal loaf
15. Add the rest of the cherries with the syrup and finish of with the rest of your base of the semifreddo
16. Top fully with plastic wrap and store in the freezer for at least 6 hours
