### Introduction
Bright, zesty and wonderfully moist, this lemon & poppy seed almond flour cake is a true treat for citrus lovers. It is inspired by the clementine cake, made by no one else than Nigella Lawson.
Made with whole boiled lemons for an intense yet balanced lemon flavour, this cake is naturally gluten-free thanks to the almond flour, giving it a rich and delicate texture. The poppy seeds add a subtle crunch, while a light lemon syrup-glaze brings just the right touch of sweetness. Perfect for an afternoon tea, a special occasion, or simply when you’re craving something fresh and flavourful. Let’s get baking!
### Ingredients
- Lemons (375 grams, approx. 2)
- 6 eggs
- White granulated sugar (240 grams)
- Ground almond flour (250 grams)
- Baking powder (1 teaspoon)
- Poppy seeds (3 teaspoons)
> [!Note]
> Be careful to use a gluten-free baking powder if you are cooking gluten free as a lot of the standard brands are mixed with starches that could introduce gluten in the cake.
### Instructions
1. Preheat the oven to Gas:190ºC | Fan: 170°C Fan.
2. Butter and line a 20cm springform tin and set apart
3. Put the lemons in a pan with water and bring to the boil (lid on) for about 60 minutes and 90 minutes. The lemons need to be fully soft and almost falling apart.
4. Discard the cooking water and set the lemons to cool. Once cooled depit the lemons.
5. Dump the softened lemons — skins, fruit and all — and give a quick blitz in a food processor to get a thick pulp/paste.
6. Beat in a separate bowl the eggs, sugar, baking soda and almond flour with a (hand)mixer till you achieve a homogenous consistency
7. Add the lemon pulp and mix well
8. Add three teaspoons of poppy seeds and mix well again
9. Pour the cake mixture into the prepared tin and bake for approximately an hour in total.

> After 30 to 40 minutes cover the cake with aluminum foil to prevent the cake from drying out.

>Also use a skewer to check if the cake is done and can be set to cool. Stick the skewer in a few different places of the cake and it should come out clean.
10. Leave the cake to cool before taking out of the tin.
11. The cake is already delicious like this but I love the idea of adding a little syrup on top of this cake. This is super simple. Just simply whisk the ingredients lemon juice and powdered sugar together till fully combined, drizzle on top the cool cake and serve!
