And best of all it is deliciously gluten-free and will change opinions of all haters out there. ### Ingredients for 3 -4 croissants (3 -4 rice paper sheets per croissant) * Rice paper (12 sheets, mini size-15 cm diameter) * Cream or milk with 30% fat (300 ml) * 2 medium sized eggs * Brown sugar (30 grams) * Vanilla essence (1 teaspoon) * Baking soda (1 teaspoon) ### Ingredients for the matcha cream * Cream cheese (approx. 200 grams) * Matcha powder (1 teaspoon) * Honey (3 teaspoon) ### Instructions for the matcha cream 1. Add the cream cheese, matcha powder and honey in a bowl and mix well ![[IMG_9206.jpeg | 250]] 2. Refrigerate the mixture for later use; I have chosen this so it's easier to fill the croissants later ![[IMG_9208.jpeg | 250]] ### Preparations preheating the oven 3. Preheat the oven at 190 degrees Celsius ### Instructions for the croissants 4. Add the cream or milk in a bowl and break the eggs in it 5. Add the brown sugar and mix well 6. Add the vanilla essence and the baking soda and mix well that it is one homogenous mixture 7. Transfer the mixture in a flat bowl so that it is easier to dip the rice paper sheets in it 8. Dip the rice paper in the mixture and make sure the full surface of the rice paper is covered in it 9. Massage the rice paper sheet in the mixture till it is relatively soft 10. You can check that the edges of the rice paper sheet are not hard anymore 11. Put it separate on a flat clean surface 12. Do this for another 2 or 3 other rice paper and put them on the previously soaked rice paper 13. Cut the 3 - 4 rice paper in three semi triangles and form the croissant 14. Add the croissant on a baking sheet and repeat the steps "starting from dip the rice paper" for as many rice paper croissants desired 15. Sprinkle some brown sugar on them if wanted 16.
