### Introduction
In true Caribbean fashion, this hot sauce is all about boldness and simplicity, using just a few ingredients to create something flavourful. Made with the Madame Jeanette pepper, one of the hottest and most aromatic chilies from the Caribbean, this sauce packs a punch. Balanced with sweet yellow onions, a touch of vinegar, and a hint of salt, it’s the perfect condiment to spice up grilled fish, meats, & Caribbean rice dishes such as my [[Arroz con Pollo]].
Which is why it is one of the most used additions to the dishes from ABC islands.
Let’s turn up the heat and get started!
### Ingredients
* 2 big yellow onions
* 1 madame Jeannette
* 3 tablespoons of vinager (flavourless)
* Salt to taste
* Sealable glass jar
### Instructions
1. Finely chop the onions, Madamme jeanette pepper. You can also place them in a food processor for a faster approach. But do not overprocess it and make it a pulp!
2. Add salt to taste and mix well
3. Transfer the mixture to a small bowl and mix in 3 tablespoons of vinegar. Stir well and taste. If needed, you can add more vinegar, water and/or salt, depending on the taste of your hot sauce.
4. Transfer to a sealable glass jar and store in the fridge
