*Another great Classic Greek Salad*

### Introduction
This is one of my favourite Greek salads! Other than the classic [[Greek Salad]] with fresh cucumber, juicy tomatoes, and the unbeatable Feta cheese (“if you know, you know!”). This recipe is classic on its own. Combining vibrant, fresh ingredients with a touch of creativity, this salad will transport you straight to Greece with every bite. Whether you’re hosting a summer gathering or craving a quick, flavourful (side)dish, this recipe is guaranteed to bring the taste of the Mediterranean to your table!
### Ingredients for 2 - 3 people
* Aubergine (2 -3 medium sized)
* Tomatoes (2-3 medium sized)
* 1/4 bunch of parsley (+/- 30 gr)
* Feta (25 gr/ or 1/4 block Feta block)
* Virgin olive oil to taste
* Salt and pepper to taste
### Instructions
1. Heat up the oven to 200 degrees Celsius
2. Cut the aubergines in half and with a fork put holes in them so they can take up the olive oil better
3. Brush the aubergine with olive oil and sprinkle salt on them
4. Put them in the oven for 45 to 60 minutes till they are soft and have lost their bitterness
5. With a spoon, scoop up the meat of the aubergines to a bowl
6. Dice the tomatoes, finely chop the parsley and add
8. Crumble the feta on top
9. Add some salt, pepper and virgin olive oil to taste
